Potato Gnocchi

These potato gnocchi are not only delicious but easily cooked up in the kitchen! Serve with Josie’s Famous Tomato Sauce!

  • Boil 6 cups of water in a large pot with potatoes.
  • Allow potatoes to cook until a knife is able to cut through with little resistance, about 15-20 minutes.
  • After potatoes have cooled, use a potato masher, tomato masher, or a fork to create noodle like pieces of the potato or a mashed potato consistency.
  • Add mashed potato to large area, adding flour around the mixture. Slowly add the flour and knead until the potato has formed a dough like ball. Add flour as needed to create dough ball.
  • Let dough sit for 5-10 minutes.
  • While waiting, boil 4 cups of water with 2 large pinches of salt.
  • Cut about 2 inch strips from dough and roll out to form 3/4 inch - 1 inch strips.
  • Cut gnocchi pieces into 3/4 inch - 1 inch rectangle pieces.
  • Use a the back of a fork to roll the gnocchi and create small ridges. To get the full effect, gently glide it down the fork starting at the curve and ending at the tips of the fork. Be sure not to press too hard as this will tear the gnocchi.
  • Add a sprinkle of flour to completed gnocchi pieces.
  • When the water is boiling, add gnocchi to water. The gnocchi are cooked when they have all popped back up to the top of the water.
  • Drain gnocchi and serve with Josie's Famous Sauce or one of your family favorites!

Notes

Flour - You may need more or less flour to help create your dough.
