Pasta of choice

Lemon Zest of 1 Lemon

Salt and Pepper to taste
Instructions

Boil water with salt and add pasta to cook.

Place ricotta cheese in a large bowl and break it up into large chunks. Add about 1/2 - 1 cup of pasta water and mix around until moist.

Add lemon zest and salt and pepper to cheese to taste.

When pasta is al dente, save 2 cups of pasta water then drain and pour pasta in large serving bowl or back to pot. Add ricotta cheese mixture to pasta and mix. If needed to make the ricotta mixture creamier, add saved pasta water and mix.
