Eggplant Parmigiana

Ingredients
  • 2 Eggplants
  • 2 cup Josie's Famous Sauce without the beef
  • 1 lb Mozarella Cheese
  • 1 cup Parmesan Cheese
  • Salt and Pepper to taste
  • Oil
Instructions
  1. Slice ends off of eggplants and slice eggplant 1/4 inch thick long ways.
  2. Lay sliced eggplants on broiler pan and top with olive oil. Place them in the oven on the middle rack; checking frequently until they are browned. Flip when browned and repeat process.
  3. When both sides of the eggplant slices are browned add salt and pepper.
  4. To begin setting up the parmigiana, have your baking pan ready with a layer of sauce on the bottom.
  5. Next add a layer of eggplant.
  6. Add a thin layer, follow your heart, of parmesan cheese.
  7. Add a layer of fresh mozzarella.
  8. Continue these steps until you reach the top of your pan.
  9. Place plan in oven at 350 degrees for about 35-40 minutes or until bubbling and cheese has melted.
  10. When finished, allow the food to sit and cool for 5 minutes.
