Chicken with Peppers (Roman Style)

Ingredients

Chicken legs
3
Chicken thighs
3
Bell Peppers
(We use yellow and red
)
2 cloves
Garlic
1/2

White Wine

Salt and Pepper to taste

Instructions
To prep tomatoes, add tomatoes to boiling water and then cold water and peel skin off. Chop them and set aside in a bowl.
To prep chicken, pat dry and take skin off of thighs.
Heat a pan with oil and smashed garlic.
Add chicken to pan and brown about 10 minutes depending on size of chicken, check frequently making sure that they are not sticking or burning to pan.
While the chicken is cooking, start slicing peppers into long strips.
When chicken has browned, add wine and allow to cook for a few minutes.
Add peppers to pan and cover for about 5 minutes.
Uncover chicken and peppers add tomatoes and salt and pepper to pan. Recover for about 25 more minutes depending on size of pepper strips and chicken.
When chicken is cooked through and peppers are soft, let sit for 5 minutes to soak in the juices!
