Instructions
- Melt butter in pot and toast rice until rice is opaque.
- Add chicken stock liquid about .5 cup at a time to toasted rice. After adding about 1 cup of chicken stock, add tomato sauce and stir. Continue to add chicken stock until rice is cooked.
- When rice is cooked, add parmesan cheese and mix to incorporate.
- Allow risotto to cool.
- When cool, add egg to mixture and full incorporate.
- Use a spoon to scoop mixture into palm of your hand (about 2-3 tablespoons). Flatten the rice a bit in your hand and place one small piece of the fresh mozzarella in the middle. Form the rice around the cheese, creating an egg shape. Be sure that the cheese is completely covered - if needed added more rice to the ball.
- To prepare for frying, pour oil in pot and begin to heat up. The oil is ready when it is 350-375 degrees F.
- Add the remainder of the eggs to 1 bowl, add breadcrumbs to a different bowl.
- Dip suppli into egg and then breadcrumbs. Make sure to fully coat the rice ball with breadcrumbs.
- Place 3-4 suppli into hot oil and fry until golden brown.
- Enjoy when warm!
